Another gorgeous, hot day in Puerto Vallarta, Mexico, and it was time to eat. My mother had never had tacos before, so off we went to check out the Taco Bar.
Pretty delicious looking tacos, right!? They were indeed!
They had quite the variety of vegys and sauces you could add, some spicy, some not, which was fun. But the one thing that kinda grossed me out was the fact that the refried beans were made with pork lard! I learned that, after the fact, from another tourist on one of our little town excursions! That creeped me out. I’m just glad I learned that sooner than later because I have made it myself (in my “Amazing Vegan 7 Layer Dip”) and love refried beans. OK, so good to know, no more refried beans in Mexico, unless I ask, of course.
I have to say, Everybody was so amazing and accommodating on this trip in regards to all my food requests! Thank you Mexico!!! xo
