I drove down to Function Junction, Saturday evening, to “quickly” participate in the Vegan Potluck, but didn’t stay long due to the fact that my son wasn’t feeling well. I made a quick appearance, chatted for a little bit, grabbed some food to take back home with me, and left my Carrot Cake there …
I brought home a mixture of somewhat spicy raw vegy salad/coleslaw, stuffing made into little patties, mashed potatoes with gravy and some other roasted tupers like carrots and parsnips. And one very delicious (“looks like someone else thinks so too!“) and good-looking Cheese Cake with Blueberry Compote ….. all vegan of course. The Cheese Cake is something a friend made from the “Oh She Glows Every Day” Book (this is Angela Liddon’s second book). I don’t have it (yet), so looks like I should perhaps buy this one too!
This Cake was so flipping good!!!! Completely, totally amazing! Every bite was a delight! And it looks so much more exiting and decadent than my Carrot Cake, but the Carrot Cake is such an awesome snack in the morning with your coffee or a delicious treat in your brown bag lunch!! One of my son’s friends called it “rich”, as in filled with lots of goodies …
I didn’t add any icing this time but it sure has a lot of shredded carrots, raisins, shredded coconut and walnuts … so delicious! And the second time I made it, I divided the batter into 2 loaf pans instead of the 9″ by 9″ pan, which turned out quite well!
Pretty easy recipe! I got it this one from a friend ….. thanks Leigh!
- 2 C. white flour
- 1 C. white sugar
- 1/4 C. brown sugar
- 1/2 tsp salt
- 2 tsp baking powder
- 1/2 tsp baking soda
- 2 tsp cinnamon (or a little more 🙂
- 3 C. shredded carrots
- 3/4 C. of canola oil (or 1/2 C. applesauce, which is what I use, if you don’t want oil in your baking)
- 1/2 C. orange juice, freshly squeezed preferably (approx. 2 oranges)
- 1/2 C. raisins
- 1/2 C. shredded unsweetened coconut
- 1/2 C. chopped walnuts
Preheat oven to 350….. recommended: a 9″ x 9″ pan ….
- Mix flour, sugars, salt, soda, powder, cinnamon well.
- Add Carrot and oil/or applesauce. Mix well.
- Add Juice and mix again.
- Add coconut, raisins, and nuts and transfer to pan (oiled).
- Cook for 45 minutes or until toothpick is dry!
- Yummy Vegan Goodness!
I had to leave the Cake in the oven a little longer due to the applesauce. There’s more moisture in the Cake so it needs to bake a little longer. But it is sooo worth it! Have Fun, Enjoy, and here’s to Health and Happiness to Everyone!
