So as I was stretching, and doing my Ab work-out at the Gym, I was envisioning a crispy, juicy, crunchy, raw salad for dinner. We dropped by Nesters again to buy a few more groceries, even though we were just there yesterday! No matter…. here we go…. (I try to always buy organic)…..
So I just threw together…. quick and simple….
- 1 can of black beans, rinsed, drained
- 1 can of chick peas, rinsed, drained
- 2 celery stalks, diced, with greenery
- 1 tomato, diced
- 1 red bell pepper, diced
- 2 mangos, diced
- 1/2 cucumber, diced
- 1 apple, diced
- fresh kernels from cooked corn
- 3 green onions, diced
- 1/3 C. freshly squeezed lemon juice
…. of course, you can add more or less, or add other fruits and vegetables that you love! I found a Black Bean and Corn Salad from allrecipes.com that I kind of copied, but I added a bunch of stuff and left out a bunch of stuff like the garlic, cayenne pepper, olive oil, cilantro and avocado. I had a specific vision so just went with that! Plus wherever possible, I leave out the oil! Cilantro would have been nice but my son doesn’t fancy the stuff, so that’s ok…… (I did make some rice and corn on the cob for the boys as well)….
