I found this recipe on the back of the bag for Roger’s Oats, and have played around with the ingredients a little to make it my own….
Now, I don’t use dairy, so instead I used almond milk, which worked out fantastic! And instead of butter (any kind), I used apple sauce, in fact, I use apple sauce whenever I bake now, NOT oil or butter! And I used whole wheat flour instead of white flour. Plus I made a flax egg (1 tbsp of ground up flax seed with 3 tbsp of water, let sit in fridge for a few min.) instead of a chicken egg. So, these muffins are nutritious and yummy!! oh, and I use dark chocolate for the chips, not milk chocolate. I throw in a cup, it’s not mentioned here, but we like our chocolate chips!
For the oats, I did grind up one cup, then threw the other half in, as is, for texture (I’m sure you could use whatever Oats you want). AND, I also added 1/2 Cup of almonds ground up, like flour. And I baked them for another 10 min. due to the moisture.
They are so unbelievably delicious! I like to squish a couple more raspberries into each muffin before they go into the oven! I usually eat 2 of these a day, throw them into my lunch bag, and some days, bring extra to share them around. I want others to know how yummy baking can be without animal products!
Instead of raspberries, one time, I added blueberries! Those were delicious as well!
And, the last time, I added chocolate powder (I think about 1/4 Cup), Hershey’s, to the recipe, and once again, they tasted awesome!!! So….
Chocolate Raspberry Chocolate Chip Muffins! Yum!
