I forgot what Gazpacho meant, so checked it out… the following recipe isn’t a soup, but it is a mélange (mixture) of vegys and fruit and it is served cold.
Found this Recipe “Pineapple Mango Gazpacho” on “FullyRawKristina” and man, am I glad I found it!! This is seriously so scrumptious, I didn’t wanna stop eating it…..
So juicy, crispy …. absolutely delicious with the sweetness of the pineapples and mangos, but abit tart from the peppers…..
This is really simple …. just dice up all the vegys and fruit, and throw them all together in a big bowl….
- 1 – 3 cucumbers,
- 1 large pineapple,
- 1 – 2 mangos,
- 2 – 3 tomatoes,
- 1 – 2 red bell peppers,
- 1 green bell pepper,
- some yellow onion, maybe 1/4 cup, and then,
just pour some freshly squeezed lemon juice over everything, stir and serve, and eat and enjoy!! This is seriously so easy!
If this seems like too much, just cut the recipe in half. I like this amount because I can take it to work with me for lunch! and eat it all day and eat a lot of it and the next day!
I think I’ll take it to the next vegan potluck too!! 🙂
I’m trying to get into the raw vegan food a bit, and I have to say, I always notice that I feel better, cleaner, more energetic on raw foods, but I like to experiment in the vegan world …. there are so many recipes to challenge your palate with, it’s so exciting!
