~ Potatoe Salad from the Green Moustache ~

Oh finally….. I’m back on my blog…. I have missed you sooooo much, soooo badly!!! My taxes took over my life there a few weeks back and then I started working at the Green Moustache to experiment with my work situation. So I actually started working more, which is not quite what I wanted!!  Then I didn’t have time to blog, or keep up with my cooking and baking, which I love! Well, I did still cook and bake, not as much though, but now I am overwhelmed and so tired. What’s the point of that!!??

So far, it’s been absolutely amazing working at the Green Moustache, the food is awesome and the girls I work with are incredible!  I do love being there, but I have to be honest, the hourly wage is not sustainable. Darn! I have learned so much already ….. I did not know you could make raw cakes! And man, are they ever delicious…. that’s an understatement!!!  Cold chili on brown rice with greens and cashew cream on top, then there’s kitchari (lentils with potatoes and carrots and 7 spices), and wraps but not with tortillas, with collard leaves, and hummus inside, and quinoa and shredded beets, shredded carrots, and alfalfa sprouts, and then there’s also a flaxseed wrap (literally wrapped with a rectangular-shaped flaxseed wrap), and kambucha, and smoothies, and teas, and juices all pressed in the back of the store! (That was me juicing on Tuesday! I will post about that too, the machine is huge, as tall as me). Also there’s the Buddha Bowl, and the Superfood Salad! Oh Yeah, and the Potatoe Salad!

…… COOK UP 4 lbs of POTATOES with the Skin, or not…. that might be too much for you, but I like it, because I always take some to work…. leftovers are awesome!

When they have finished boiling, let them stand for a little bit to cool down…. when ready ADD 1  CUP  OF  CHOPPED  CILANTRO, 1/2  CUP  OF  DILL  AND  1  CUP  CHERRY TOMATOES! (all fresh, of course, if possible!)

And, then also add your DRESSING, which will have been blenderized:

  • 1/2 c. cashews (soak first)
  • 2 tbsp. dijon mustard
  • 2 whole cooked potatoes
  • 1/4 tsp. chili powder or cayenne pepper (I didn’t add any)
  • 2 small garlic cloves, minced (I added more)
  • Juice from 2 lemons (…and, I added more)
  • and Water, as needed

I mean, you can always add less or more, depending on your personal preference!

Looking forward to bringing some to work tomorrow! I brought this salad to one of the vegan potlucks too. The bowl was empty in, literally, minutes!  🙂
