~ Vegan Pancakes and Olive’s Community Market ~


That was breakfast this morning…. well, actually, brunch! I can’t remember where I got the recipe from, sorry, on-line somewhere, but if you add the following ingredients together….

  • 1 C. flour (whichever: today, I used whole wheat)
  • 1 tbsp. sugar
  • 2 tbsp. baking powder
  • little salt
  • 1 C. soya milk (I used almond milk today)
  • 2 tbsp. vegetable oil
  • little vanilla extract (something I always add, I don’t think it was on the recipe)
  • ground up flax seed (again something I always add, this time 4 tbsp, don’t think it was on the recipe either)

…you’ll get…

…a yummy breaky…!

Incroyable, incredible! Love the “whole-wheaty” taste of these pancakes!

During my busy week, I was in Function Junction, and popped into Olive’s Community Market, an organic grocery store, for a latte and a treat. My latte had almond milk (they have a variety of non-dairy milks) and a vegan treat.

It was an energy bite with lots of seeds (flax, hemp, chia), but I wasn’t really crazy about the flavour unfortunately. I thought it tasted a bit bland. I think I was wanting a little more sweetness in this little bite. Nice and chewy and crunchy though!  Next time, I will try something else…there is so much to choose from, so that will be no problem!

Olive’s also has an array of products, plus fresh produce (vegetable, fruit, etc.), and delicious healthy choices for your lunch (sandwiches, soups, muffins, bread, other pastries, lattes, coffee, tea) (vegan or non-vegan) and I just discovered you can order cakes too!
