~ Rising at 7 a.m. and Vegan Banana Waffles ~

Rising at 7 a.m. on a Saturday when I could have slept in!  But then I lay there and thought, but what about all the awesome pictures I could take? And with that, I jumped out of bed, sprang into my clothes, and what a glorious day it was!  Yes, it rained to start with, (I don’t really care, I love the rain), but at the end of our walk, the sun came out and the sky’s blue colour just poured all over us……

I managed to get a decent shot of that eagle through Chris’ Swarovski scope! These birds are just so majestic! It is such a pleasure to be out here in this beauty, and to think I almost stayed in bed. Once a month, I meet up with this birdwatching crew and it’s been very inspirational…. I was so fascinated by their knowledge and how they know what kind of bird that is flying over head by the way they flap their wings, their size, their colour, if they are mature or adults, their song, their call…. I’ve always loved birds and had a canary and a finch when I was younger, but now, I just hate the thought of keeping them in a cage, so instead, I bought 2 bird feeders and watch them when they come to me. I can now recognize a wide variety of birds, and if you stop and listen, you will be amazed how many are actually around you…..

Whistler mountain has a base of 332 cm’s and 32 cm’s fell last night, but down in the valley, the snow is quickly melting. It was only about 2 C this morn., but the fresh air was so welcoming!

Being out in nature is always amazing, rejuvenating

After a fantastic start to the day, I went home to make up some delicious waffles! That was around 11:00…..

This recipe is different than the other one that I posted on Dec. 27 (baking category) but you can see by this recipe, it’s fairly easy. You can substitute apple sauce for vegetable oil if you choose…. it’s very delicious…. and it makes 8 waffles (I actually got 9 this time), plus you get approx. 4 gr. protein per waffle. (I’m just in the middle of writing an article about where I get my protein from). The 4 tsps bak.powd. means baking powder, just in case you don’t understand my writing.

I’m just wondering if this recipe would work as pancakes as well…..?   I made a delicious smoothie to go with our breakfast as well…..ok, brunch, we ate around 12:30. My smoothie contains almond milk, spinach, banana, fruit (strawberries, blueberries and peaches), some juice to top it off, and a tbsp. of Udo’s oil (which is a great source of omega-3 and -6).

Mmmmmmm….! “So good!” We always pour maple syrup over top too, the syrup from Quebec, it cost more but it is so worth it! And now I still have a few waffles left over if anybody wants to snack a little later, or for tomorrow. Just take them from the fridge and pop them into the toaster, add fruit (and syrup) and voilà. Perfect!
